In your case, I suggest you carry out the following tests:

1) ZOV test

2) ZAA test

3) ZST

4) Latex stability test (various tests)

5) Latex gelling rate test

Tests from item 1 to 3 above access the latex compound's behaviour in the presence of ZnO. After carrying out these tests for a period of time in conjunction with the performance of the latex compound during the a actual manufacturing processes, you could eventually assess the "processability" of any given latex compound under the same process conditions you are using.
